Darling Cellars, founded in 1997 as a privately owned winery is situated on the West Coast of South Africa. Consistently upholding a philosophy focused on genuineness and quality. The core mission underscores a profound reverence for the land and its produce: to create wines that not only capture the distinctive terroir of the Darling region but also showcase the grape varietals flourishing in its environment.

The farm

Darling Cellars sits on the R315 between Malmesbury and Darling, just 1 hour’s drive from Cape Town and 15 kms from the coast line.

The cool and temperate West Coast climate lends itself to a variety of different micro- and meso-climates which, along with the different soil types, lead to unique grapes which we guide into even more unique wines. With approximately 95% of all our vineyards being Unirrigated (dry land) and roughly the same percentage being bush vines (i.e. not trellised), this is as close as one can get to what nature intended for grapes to be.

Relying on natural rainfall in a practice known as dry farming. This method encourages deeper root growth, resulting in more robust and drought- resistant vines. Additionally growing bush vines allows the vines to grow in a more natural state, potentially reducing the need for chemical inputs, promoting the health of the vineyard ecosystem and further more producing grapes which are naturally balanced with no dilution of concentration, just like nature intended.

Creating an identity stretches further than just a brand and logo. It encompasses a certain look and feel about the cellar, the wine, label and bottle, the attitude of the people and the presentation of all these factors. An integrated strategy is thus followed from grapes to wine.

The wines are crafted to show class and complexity, offering a sincere sense of enjoyment while staying true to the unique terroir of the West Coast, Darling district and its varietal character.

Viticulture

The Vines that define us

Approximately 95% of our 900 hectares are dryland bush vines — resilient, low-yielding and perfectly suited to the region. Deep roots draw nutrients from ancient soils, producing concentrated fruit. Hand-pruning and harvesting ensure precision and preserve the integrity of every vineyard block.

Varietals

Darling excels in Sauvignon Blanc and Shiraz, with the cool Atlantic influence producing wines of freshness and intensity. Key cultivars include Pinotage, Chenin Blanc, Grenache, Mourvèdre, Merlot, Viognier and Nouvelle. Historic vineyards remain central to our identity, with Chenin Blanc and Cinsaut dating back to the 1940s, and premium Pinotage planted in 1974. Grenache thrives in dry conditions, while Shiraz delivers depth, colour and complexity. Viognier and Nouvelle add further character to our range.

Terroir

Located 6–30 km from the Atlantic Ocean, Darling benefits from cooling sea breezes, morning mist and the cold Benguela current, resulting in slower ripening and balanced wines. Decomposed granite and Oakleaf soils, combined with varied slopes and aspects, create natural diversity. Cooler coastal sites enhance freshness, while warmer inland areas build fruit intensity.

ART OF WINEMAKING

In the Cellar

Since 1948, the cellar has been extensively modernised, featuring stainless steel tanks from 5,000L to 54,000L. This allows for both small-batch, distinctive wines and larger, consistent volume brands. The barrel ageing cellar, housing around 450 barrels, is the heart of the operation.

Winemaking is both science and art. Each vintage brings natural variation, and the challenge is to express cultivar and vintage character while maintaining consistency. Blending, deep vineyard knowledge, and close collaboration between viticulturist, producer, and winemaker are key. With only one chance to harvest at the perfect moment, careful timing is critical.

In the cellar, grapes and wines are handled as naturally as possible. Quality fruit, modern equipment, skilled people, and a shared passion for wine are the foundations of everything we produce.

Our bottling

Darling Cellars also provides fully inclusive bottling and labelling services for winemakers and brands. Clients can create custom labels while benefiting from Darling Cellars’ advanced technology and experienced team.

Darling Cellars features a modern, automated bottling line capable of both screw cap and cork closures, allowing wines to be packaged to suit the needs of diverse global markets.

In 2005, the cellar further expanded its capabilities with the addition of a Bag-in-Box line, offering both traditional and contemporary packaging options. This makes Darling Cellars a true one-stop destination for quality wine packaging.
